Pecan Pie

Pecan Pie

Ingredients

1 Pie Crust
1 cup Corn Syrup, light
1 cup Brown Sugar, light
tsp Salt
cup Unsalted Butter, melted
1 tsp Vanilla Extract
3 Eggs
1 ¼ cups Pecans, finely chopped
¼ cup Pecans, whole or halved

Directions

Preheat the oven to 350 degrees.

Melt butter completely in the microwave.

Mix corn syrup, brown sugar, salt, melted butter, and vanilla until completely dissolved. In a separate bowl mix the eggs until slightly beaten. Mix into the syrup mixture and mix until completely mixed. Grease a 10 1/4 in. tart pan, roll out pie crust and carefully place in tart pan cut the edges so the dough does not go outside the pan.

Fill 3/4 of the way with the syrup mixture, add in the chopped pecans. make sure they mix into the syrup, place the whole or halved pecans on the top.

Bake for 30 minutes, remove and place tin foil around the edge covering the crust. Bake for another 30-40 minutes, check at 30 minutes with a knife in the center to see if the knife comes out clean. If the knife is clean at 30 minutes remove, otherwise bake for the full 40 minutes.

Rhubarb-Strawberry Pie

Rhubarb-Strawberry Pie

Ingredients

3 ½ cups Rhubarb, chopped
2 cups Strawberries, sliced
1 ⅓ cups Sugar
¼ cup Corn starch
¼ tsp Cinnamon, ground
1 Pie Crust
Topping
Lemon Juice, Milk, Sugar, and/or Ground Cinnamon

Directions

In a sauce pan combine rhubarb, strawberries, sugar, lemon juice, and ground cinnamon. Bring mixture to a boil, stirring occasionally. Let cool

Mix corn starch with sauce mixture then pour into prepared pie pan

Peppermint Meringue Treats

Peppermint Meringue Treats

Ingredients

3 Egg Whites, Large
¾ cup Sugar
½ tsp Peppermint Extract
Red and Green gel-paste food coloring

Directions

Preheat oven to 175 degrees. Line 2 baking sheets with parchment paper; secure corners with masking tape. Fit a pastry bag with a small open-star tip. Set aside.

Make meringues: Put egg whites and sugar in the heatproof bowl of an electric mixer. Set bowl over a pan of simmering water, and stir gently until sugar has dissolved and mixture is warm to the touch, 2 to 3 minutes.

Transfer bowl to an electric mixer fitted with the whisk attachment. Mix on medium-high speed until stiff peaks form. Mix in peppermint extract.

Using a new small paintbrush, paint 2 stripes of red food coloring inside the pastry bag, one on either side, then paint 2 stripes of green on the 2 remaining sides to make four stripes at every 90 degrees. Fill bag with 1 to 2 cups meringue. Pipe small (3/4-inch-high) star shapes onto prepared baking sheets. Refill bag as necessary, adding food coloring each time.

Bake treats until crisp but not brown, about 1 hour 40 minutes. Let cool completely on sheets on wire racks.
