Pecan Pie Recipe

1 Pie Crust Recipe II
1 Cup Light Corn Syrup
1 Cup Light Brown Sugar
1/3 Teaspoon Salt
1/3 Cup Melted Unsalted Butter
1 Teaspoon Vanilla
3 Eggs
1 1/4 Cup finely chopped Pecans
1/4 Cup Whole or Halved Pecans

Directions are after the break.

Preheat the oven to 350 degrees.
Melt butter completely in the microwave.

Mix corn syrup, brown sugar, salt, melted butter, and vanilla until completely disolved. In a separate bowl mix the eggs until slightly beaten. Mix into the syrup mixture and mix until completely mixed.
Grease a 10 1/4 in. tart pan, roll out pie crust and carefully place in tart pan cut the edges so the dough does not go outside the pan.

Fill 3/4 of the way with the syrup mixture, add in the chopped pecans. make sure they mix into the syrup, place the whole or halved pecans on the top.

Bake for 30 minutes, remove and place tin foil around the edge covering the crust. Bake for another 30-40 minutes, check at 30 minutes with a knife in the center to see if the knife comes out clean. If the knife is clean at 30 minutes remove, otherwife bake for the full 40 minutes.
